Abstract:
The article assesses the trends in the food culture of Russians in the context of world trends. In particular, the data on the increase in the proportion of overweight population in Russia and the world, fixed increased attention to the products of assortment groups of "healthy food". Within the Central Federal district of the Russian Federation the structure of consumption is analyzed, food habits of inhabitants in a quantitative ratio of the main commodity groups are estimated. The aspect of the problem of retail transformation is studied, including, taking into account the provision of regions with food.
