    Abstract:
    The basics of modern processing technologies of grain raw materials (wheat, rye, barley, triticale, sorghum) for alcohol are presented in the monograph. The results of theoretical and experimental research on biocatalysis of grain raw polymers are summarized, and general recommendations for the processing of each type of grain are given. Particular attention is paid to the development of initial requirements for food and technological adequacy of grain raw materials, providing high quality and efficiency of production of alcohol and alcoholic beverages. The monograph is intended for specialists of agricultural enterprises and processing industry engaged in the production of ethyl alcohol from food raw materials and alcoholic beverages, as well as for researchers, graduate students and students to be used in educational activities on the biotechnology, in educational processes of preparation for bachelors' and masters' degrees in "Biotechnology", "Food biotechnology", "Fermentation", etc.
