    Abstract:
    The monograph studies in detail theoretical and practical aspects of use of cereal crops in the diet of patients with type 2 diabetes. We present modern ideas about type 2 diabetes mellitus and diet in case of this disease. We also present extensive material on the analysis of various types of cereals and leguminous crops as sources of macro- and micronutrients in human nutrition; we outline the basic principles of their inclusion in the diet of patients with type 2 diabetes. From the standpoint of traditional medicine, we consider the possibilities of using cereals as food matrices for specialized food products in the diet of patients with this disease. We also consider potential allergic and other risks of cereal and leguminous crops use in diabetes mellitus; we present the analysis of international and national documents related to technical regulation in the field of quality and safety of specialized food products. The paper is intended for doctors, nutritionists, endocrinologists, experts in the field of food technology, and for students of higher medical educational institutions, cadets of certification and thematic cycles of improvement and specialization of doctors in nutrition and nutrition.
